What you can actually learn
Honestly? Almost anything. The popular end of the scene looks like this:
Cooking. The gateway class. Pasta-making, sushi rolling, Thai curries, sourdough — you eat your homework.
Pottery and ceramics. Wheel-throwing nights are everywhere now. You will make a lopsided bowl and love it fiercely.
Dance. Salsa, swing, tango, hip-hop — most socials welcome total beginners and rotate partners, so going solo is normal.

The honest pricing: drop-ins $15–35, single workshops $40–80, full courses a few hundred. Libraries and community spaces run plenty for free. If money's tight, volunteer-assisted studios and community programs keep the good stuff accessible — price is rarely the real barrier, inertia is.
How to pick a good class
Read the teacher, not the brochure. A great teacher with a plain room beats a gorgeous studio with a bored instructor. Look for reviews that name the teacher — that's the signal.
Beginner means beginner. "All levels" sometimes means the regulars show off while you drown. A class labelled genuinely for beginners is worth more than a fancier mixed one.
Small beats big. Eight people and a teacher who corrects your grip; not forty people following a mirror.
Try the drop-in first. Almost every studio offers one. A single session tells you more than ten reviews.
Check the make-up policy. Life happens; good studios let you make up a missed week without drama.
Your first class, survived
Going alone is normal — most people in beginner classes arrive solo.
Bring water and whatever the confirmation email says. Nothing else.
