Farmers Markets & Food Souks in Fez

Fez doesn't have farmers markets in the Western sense — no Saturday-morning stalls with organic honey. What it has is better: a medieval food system still running. The medina's food souks are daily, sprawling, and completely local, and the weekly souks in the surrounding villages are where the countryside comes to town.

The medina's food souks

The medina's food streets are concentrated around the Kissaria and the lanes running off Talaa Kebira and Talaa Seghira. This is where Fez eats: pyramids of olives, barrels of preserved lemons, hanging dates, fresh khobz from wood-fired ovens, and butchers, fishmongers, and spice pyramids in every direction.

The spice square (Place el-Hammas area) is the photogenic bit, but the real shopping happens in the narrower lanes where restaurant buyers do their rounds. Follow your nose and the crowds. If a stall has a queue of Moroccan shoppers, join it.

What to buy: Medjool dates, amlou (the almond-argan spread), ras el-hanout blended in front of you, preserved lemons, and olives by the kilo. Everything travels well except the fresh cheese.

Souk de Bhalil: the Wednesday market

The most famous weekly market near Fez is the Souk de Bhalil, held every Wednesday in the village of Bhalil, about 22 kilometres northwest of the city. It's a proper country souk — livestock, produce, household goods, and a social occasion for the surrounding villages — and the village's own website confirms the Wednesday rhythm.

Getting there takes a grand taxi or a tour; it's not on a bus route tourists use. Go early, expect a working market rather than a curated experience, and you'll see the rural economy that feeds the city. The Wednesday souk also makes a good pairing with Bhalil's troglodyte cave houses, which are worth the trip on their own.

A traditional weekly country souk held every Wednesday (confirmed by the village's own website). Livestock, produce, and household goods; a working market, not a tourist show. Reachable by grand taxi or tour; pair it with Bhalil's cave houses.

Fez's signature flavours are distinct from the rest of Morocco — the city is famous for its pastilla (the sweet-savoury pigeon or chicken pie), its seven-vegetable couscous for Fridays, and its elaborate wedding dishes. The medina's pastry shops sell chebakia, briouats, and cornes de gazelle by the box.

For picnic supplies, the area around Boujloud has bakeries and rotisseries doing roast chicken to take away. Buy bread fresh — khobz from a wood oven goes stale fast, which is exactly why it tastes so good warm.

Practical tips

Eat what's in season, buy what the locals are buying, and you'll eat better in Fez than anywhere else in Morocco.
