Fez is Morocco's food capital — the city's cuisine is famous across the country for its refinement: the pastilla, the elaborate tagines, the wedding dishes. Eating well here is easy; eating memorably takes a little guidance.

The medina's destination restaurants are mostly set in restored houses and riads — dinner in a courtyard with zellige tilework and a fountain is the Fez experience. These are the verified names worth knowing.
Fassi cuisine is distinct: pastilla (the sweet-savoury pie, traditionally pigeon), tagines with prunes and almonds, and seven-vegetable couscous. If a menu has pastilla, order it — this is the city that invented it.
The Ruined Garden

Set in a restored riad garden in the medina, The Ruined Garden is one of Fez's most atmospheric lunch spots — salads, tagines, and grills served among orange trees. Lunch and dinner seatings daily.

Dar Roumana
30 Derb El Amer, Zkak Roumane, Fes
A beautifully restored guesthouse in the ancient medina whose restaurant serves polished Moroccan and Mediterranean dishes — tagines alongside seared sea bass and careful desserts. The upscale end of medina dining.
Best for: Refined Moroccan-Mediterranean cooking
Darori Resto
2 Derb Seyour, Ancienne Medina, Quartier Bab Rcif
A small, much-loved restaurant hidden in a lane near the Rcif mosque, run by a Franco-Moroccan couple. Classic Fassi dishes in a preserved old house — the kind of place you remember. Evenings only.
Best for: Authentic Fassi cooking in a historic house
Restaurant Dar Hatim
Fandak Lihoudi, 19 Derb Zaouia, Fes
A traditional house turned restaurant in the heart of the old medina, known for its chicken pastilla and slow-cooked tagines. Unfussy, atmospheric, and fairly priced.

Casual and local
Beyond the destination rooms, the medina runs on small neighbourhood restaurants — the kind with a handwritten menu, a wood oven, and a queue at lunch. Chez Hakim on Rue de la Poste is a solid example: tajines, couscous, and salads at local prices.
In the Ville Nouvelle, the dining is more conventional — French-Moroccan bistros and grill houses along Avenue Hassan II. Useful for a change of pace, but the medina is where the cooking is.

La Maison Bleue (2 Place de L'Istiqlal) runs a hotel restaurant with a strong reputation for Moroccan fine dining in a spectacular setting. Palais Amani's Eden restaurant does gastronomic Moroccan under the stars — book ahead, it's one of the city's special-occasion rooms.
Café Clock (7 Derb El Magana) is the casual counterpoint: camel burgers, Fez salad platters, and almond milkshakes on the famous rooftop. Not fine dining, but essential Fez.
Practical tips
- Lunch is the main meal in the medina — many kitchens slow down mid-afternoon.
- Friday is couscous day across Morocco; order it on Friday.
- Book dinner ahead in high season; the good riad restaurants fill up.
- Tipping 10% is customary in sit-down restaurants.
Eat where the room is beautiful and the tagine is slow. In Fez, those two things usually come together.
